I really love Larabars – and so does the rest of my family. They are one of the only convenience-type bars I buy but it’s sometimes more economical to make them myself. I used to make bars similar to Larabars but they would crumble and didn’t transport very easily, so I used the same batter but starting rolling them into balls. They hold together so much better and they seem a little more like a treat. These only take a couple of minutes to make in the food processor so they are very quick and easy. I like keeping them in the freezer because if they are chilled, they hold up really well, last longer and maintain a creamy texture while still being cool.  Also, they provide a great balance of fat, protein and carbohydrates so they are great snacks to have on hand.


makes 1 dozen


  • 1 cup dates (about 16), pitted and softened
  • 1/4 cup raw almonds
  • 3/4 cup raw pecans
  • 1/2 tsp cinnamon
  • 1/8 tsp Kosher salt


  • shredded coconut


Prepare the dates by removing pits and placing them in a heat-safe bowl covering dates with hot water. Allow dates to soak about 10-15 minutes to soften. Add dates into food processor along with almonds, pecans, cinnamon and salt. Blend a couple of minutes until everything is incorporated and mixture is smooth. Take spoonfuls of the date mixture and roll into balls. Makes about 12 balls. Eat right away or place in an airtight container in fridge or freezer until ready to eat.
